Ingredients:
4 Apples
1/3 cup Sugar
1/2 cup Water
3 small Bay Leaves
Instructions:
Cut & core apples. Leave peels on if you want, but at Blue Bank they don't. Then cut small pieces of the apple off of the core, not to waste any. Sprinkle sugar over bottom of a heavy pot. Let it melt and start turning brown. Add small pieces & scrapings from the apple cores and one or two finely diced apple. Cook until very soft about 5 - 10 minutes. Add water & bay leaves. Cook until apple looks like applesauce. Then add large quarters (or chunks) of apples and cook until tender.
