Johnny’s Lasagna

Ingredients:

2 Eggs

1 lb Sausage

1 lb ground Beef

3 clove Garlic

1 medium Onion

2  (6 oz) cans Tomato Paste

1 (16 oz) container Ricotta Cheese or creamed Cottage Cheese

1/3 cup Vegetable or Olive Oil

1 (28 oz) can Whole Tomatoes

1 teaspoon Oregano

2 1/2 teaspoons Salt

1 teaspoon Pepper

6 - 7 cups Mozzarella Cheese ( 3 packages sliced)

2 teaspoons chopped Parsley

3 1/2 cups Water

1 (16 oz) box Lasagna Noodles (9 noodles/recipe)

Parmesan Cheese to top off Lasagna 

Instructions:

In a large pan brown ground beef in oil with onion, garlic and parsley. Add tomato paste, tomatoes, salt, pepper, oregano and water. Simmer for 1 hour. Meanwhile cook noodles as directed. Mix eggs and ricotta cheese.In a 13x9x2 baking pan spread sauce on bottom layer then alternate noodles, sauce, ricotta mix and mozzarella cheese until pan is full, Top with sauce and parmesan cheese. Bake at 375°F for 30 minutes. Use 1 box of noodles for 2 recipes.

Yes, Johnny's last name is O’Brien, but this recipe was inspired by " Noni”, Johnny's  maternal grandmother:  Alma Albonetti Sangalatoni.
