
Bennett, Len & Nick Papania making sausage.
They use a "Papania Recipe" - but the tradition is the same.
Makes about 20 Lbs.
Ingredients:
10 Lbs ground beef (extra lean)
5 Ibs ground pork (or pork sausage)
1/2 c salt
2 boxes plain bread crumbs
1/2 oz. Cayenne pepper ( another copy says 2 Tbs)
1 jar grated Parmesan cheese ( not sure of the jar measurement)
1 jar Romano cheese
1/2 jar Italian seasoning
1 jar anise seeds
3 bunches shallots finely chopped
1 bunch parsley finely chopped
4 Tbs celery seeds
4 Tbs garlic powder
Instructions:
Mix well with hands adding water to bring to proper consistency (about one quart). Stuff into casings. Cooks best in oven at 350 °F.
