Gampy’s Italian Sausage Made Into Meatballs

Makes about 45 Golf Ball Size Meatballs  

Ingredients:

2 lbs ground beef (extra lean)

1 lbs ground pork (or pork sausage)

      (Note: I have made it with 3 lbs of just Extra Lean ground Turkey too)

1/2 teaspoon salt

1 1/4 cup of Italian bread crumbs ( I use Progresso brand)

1 teaspoon Cayenne pepper

3/4 cup  grated Italian Style 5 cheese blend (or 1/2 cup Parmesan and 1/4 cup Romano Cheese)

1 tablespoon Italian seasoning

2 teaspoons Anise Seeds

1 tablespoon Fennel Seeds

1 bunches shallots finely chopped

1/4  bunch parsley finely chopped

2 1/2 teaspoons Celery Seeds

2 1/2 teaspoons  Garlic Powder

2 Eggs

Instructions:

Mix well with hands adding water to bring to proper consistency around 1 1/2 - 2 cups. Form Meatballs and place on Cookie Sheet. Cooks best in oven at 350°F.
