Ingredients:
1 3 pound Chicken (or Thigh pieces)
1/2 cup Soy Sauce
3/4 cup White vinegar
1-2 Garlic Heads, crushed and minced
2 Bay Leaves
1/2 tablespoons Peppercorns
Salt to taste at the end of cooking
Instructions:
Bring all the ingredients (except salt) to a boil over high heat. Lower the heat, cover and let simmer for 30 minutes (or until tender), stirring occasionally. Take chicken and broil in a pan for 10 minutes. Remove the lid on the sauce and simmer until the sauce is reduced and thickened by half. (If you reduce too much add water to taste) then if needed salt to taste. Pour sauce over chicken. Serve with steamed rice.

Note: I prefer to use Chicken Thighs, and have put them with vinegar, soy sauce, garlic, peppercorns and bay leaves in a large pot. Cover and marinate in the refrigerator for 1 to 3 hours. Charles “Charlie Broussard
