Buelah's Chicken Filled Biscuit Dumplings 

(This has gotten to be one of our FAVORTIES.)   Tina O’Brien 

SAUCE -"Soup"

  1 can cream of chicken soup (can use -98 % fat free)

  1 can cream of mushroom soup (can use -98 % fat free)

  1 1/4 cups chicken broth (better than just water)

(This is the part that makes it easier – stuff the dumplings first – what vegetables don’t fit in the dumpling – you dump it into the soup)

DUMPLINGS

3 (5oz) cans boned chicken cut up (Canned, makes it so easy. I did add rotisserie chicken seasoning: salt, pepper, paprika)

     Or 1 1/2 cups cut up cooked chicken (Lisa uses ‘real chicken’)

1 cup chopped bell pepper (about 1 bell pepper) (does not have to be exact)

1/2 cup chopped onion (about 1/2 onions)

1/2 cup chopped celery (about 3 stalks)

Salt & pepper to taste 

1 can (8oz) buttermilk or country style biscuits. (Can use low fat)(Cheap biscuits work best)

Make Dumplings first – (these can be made ahead). To prepare dumplings combine the vegetables ingredients and chicken mix well. (I chop and then put in the food processor just a little.) Separate biscuits and roll each to about a 4 inch circle. (Roll out with Flour.) Place about 1/8 cup chicken mix on each circle. (Spoonful) Wrap dough around mix and seal edges. In large 3 qtr. saucepan combine all the sauce ingredients, add leftover vegetables andchicken mixture, Heat stirring until bubbly. Put the dumplings sealed end down in the soup mixture: spoon soup over dumplings. Cover tightly and cook over medium heat 15 to 20 minutes until no longer doughy. Serve one dumpling with soup mixture. (Dumplings are pretty big). I think this is the best Chicken and Dumplings ever, and looks so nice served. (Makes 10 servings). It rewarms well so I usually double the recipe.

If you use regular biscuits it is 6 points weight watcher points plus. If you use lower fat biscuits it is 4 points weight watcher points plus.

My Uncle Hubert Broussard, who was a priest in Houma, LA, cook used to make this for us. I remember it from when I was little. Lisa found the recipe and talked me through the revisions. She used to make it for us before she deserted me and moved to Kansas. LOL
