Wild Mushroom Spread

Ingredients:

2 tablespoons Butter

1 pound fresh "wild” Mushrooms sliced - eg. portobello, shiitake, crimini, oyster

1 medium Onion chopped

1 1/2 cups Mayonnaise

10 strips Bacon, fried crisp and crumbled

1/4 teaspoonful Garlic Powder

1/2 cup Cheddar Cheese grated

Cajun Seasoning for garnish

Instructions:

In a large skillet, sauce mushrooms and onion in butter for about 3 - 5 minutes. On a bowl, combine mayonnaise, bacon, garlic powder, mushrooms and onion mixture. Spread into a flat oven proof dish. Cover with cheddar cheese and sprinkle with Cajun seasoning. Bake at 350°F for 20 - 25 minutes. Serve with cocktail rye squares or crackers. This may be assembled 2 days ahead. Yields 6 - 8 servings.

Hint: Can add hot sauce to the mix as well as some of the cheese.
