Crispy Cheese Twists

Ingredients:

 6 oz shredded cheese mixture (I recommend Gruyere, Parmesan, or extra sharp cheddar)

All-purpose flour (for dusting)

1 (14-17 oz) package frozen puff pastry, thawed

1 large egg yolk

1 tsp sweet paprika

¼ tsp cayenne pepper

Kosher salt

Black pepper

Instructions:

Preheat oven to 400 F. Dust work surface lightly with flour and unfold puff pastry on surface. Roll out lightly with a rolling pin just to smooth creases. Mix 1 egg yolk and 1 tsp water in a small bowl. Lightly brush egg wash across surface of 1 sheet of pastry. Sprinkle half of the cheese mix over the egg-washed surface in an even layer. Sprinkle the cheese layer with half of the paprika and cayenne. Season with salt and pepper. Place the second sheet of pastry dough on top. Gently roll the top to smooth out the 2nd sheet of dough. Brush with egg wash. Add remaining cheese, spices, salt and pepper. Use rolling pin to press together gently. Cut dough into several lengthwise strips with a pizza cutter. Twist each strip into a coil and arrange on a baking sheet lined with parchment paper. Bake, until golden brown and cheese is toasted and crisp (12 – 18 minutes).

These can be pre-made, wrapped in plastic and frozen. They can then be baked (frozen) if you add a bit more baking time.
