Ingredients:
6 sheets fresh phyllo pastry or frozen, thawed
4 tbsp unsalted butter, melted
1 large egg white lightly beaten
1/3 cup mixed black and white sesame seeds, divided
1/2 teaspoon smoked paprika, divided
Kosher salt
ground black pepper
4 ounces Gruyere finely grated (about 2 cups) divided
Instructions:
Preheat oven to 375°F. Place a sheet of phyllo on parchment paper sheet. Brush lightly with butter and top with a 2nd sheet. Press gently to adhere. Brush with butter. Continue layering with 3rd sheet and brush with egg white. Sprinkle on half of the seeds and paprika. Season with salt and pepper. Scatter on half of the cheese. Use a pizza cutter and cut into 2” squares. Bake until golden brown, 8 – 10 minutes. Let cool before serving. Repeat for remaining ingredients.
Makes about 84 crackers.
